When checking the “Embed textures” option in the Material screen I get a permission error across a bunch of .json files.
I’ve already tried deleting the application and re-installing it, but that didn’t resolve the permissions issue.

You can ignore the error, it shouldn’t be an issue.
Note that you should never uninstall the app on iOS as you’ll loose everything.
Yup, I was just putting on my testing hat to validate if a clean install would fix it. But I exported all my projects before doing this test; so I didn’t lose anything. Still new so don’t have any UI customizations to lose.
