I am having a really hard time with the plane of symmetry. I started with a cylinder, and I elongated it and changed the dimentions so it has more of an elipse cross section to it. Then when I go to do any of the modeling it is out of the plane of symmetry and makes it impossible to mold. Is there a way I can make sure that everything stays on the correct plane?

Scroll down the symmetry menu and choose „show line“ and „Gizmo edit“
I like to activate wireframe view as well, as often your mesh polys have a Center line as well for orientation.

Normally you should almost never use “gizmo edit”.
Can you show a screenshot of your cylinder? (ideally with symmetry menu opened to see the settings and where the symmetry plane is)
If you only changed the cylinder settings, it should work flawlessy so you probably did something else (did you use the gizmo transform on it?)
