That is a great rendering. Very realistic. Texture, colors and large aperture.

I work in black and white. But I would guess the stamp tool is used to create the small scales on the fish. With an Alpha image of black and white that you need to make the shape of the scales. As with the colors you can get a gloss effect by decreasing the roughness. And last you can set the focus point in the app. This is only what I would guess. I am learning too all the time.
