I’m simply trying to paint an object white, but no white appears. Black and all colors go on perfectly. I’m totally new to this and surely just missing something super basic but I can’t figure it out.
What Shading are you using? It sounds like maybe you’re set on Matcap which may not show depending on your Matcap.
But I could be way off….

I’m on PBR-UV.
It‘s your environment picture. Choose another one. I guess you have one of the brownish environments active. You are painting white but it is lit with environment color. To check it, change from PBR to unlit.
